As soon as the weather warms up, I find myself actually wanting to eat salad! I always prefer homemade salad dressings to storebought, especially when they are so easy to throw together. All the ingredients for this dressing can be thrown in a food processor and whipped up in no time. Toss it with your favorite salad ingredients or use it as a cold sauce for fish or chicken.
Good Foods Market & Café has beautiful avocados, in addition to a huge array of organic salad fixings. Try adding something new to your salads, like thinly sliced radishes for spice, beets for sweetness, or sprouts for crunch.
1 ripe avocado, pitted
2 garlic cloves
½ cup lowfat sour cream
¼ cup mayonnaise
¼ cup buttermilk, plus additional if needed
¼ cup parsley leaves
1 tbsp red wine vinegar
1 tbsp sugar
Freshly ground black pepper and salt, to taste
Combine all ingredients in a food processor and blend until combined. Add additional buttermilk to thin to desired consistency, if needed. Season to taste with salt and pepper.
