Ingredients
2 acorn squash,approx. 1 1/2 pounds each, rinsed
8 ounces pork or turkey sausage
1/2 cup chopped onion
2 Granny Smith apples, peeled,cored, cut into a small dice
1/4 cup raisins
1/4 cup dried cranberries
1/4 teaspoon dried thyme
3 tablespoons chopped pecans
1/4 cup real maple syrup
Directions
Preheat oven to 350. Cut each acorn squash in half and scoop out the seeds. Place each half, open side down, in a large baking pan. Cover tightly with foil and bake for 45-50 minutes until tender. In a large non-stick skillet, cook sausage until crumbly, about 5 minutes and drain off fat. Add the next 5 ingredients and stir often until apples are tender, 8 to 10 minutes. Stir in pecans. Uncover squash, turn upright, and fill with the sausage mixture. Drizzle equally with maple syrup and bake, uncovered, for about 15 minutes until slightly browned.
