Ingredients
3 tablespoons unsalted butter
1 small onion, finely diced
2 stalks celery, diced
3 cups shredded rotisserie chicken
1/2 cup Frank's hot sauce
Blue corn tortilla chips
3 cups shredded cheddar cheese
4 green onions, thinly sliced
1/2 cup crumbled blue cheese
Directions
Melt butter in a large skillet over medium heat. Add onion and celery and cook until almost soft. Stir in the chicken and add the hot sauce. Simmer 1 minute. Place tortilla chips on oven proof platter. Spread chicken over chips and top with cheddar cheese. Broil or bake in a hot oven till cheese melts. Remove from oven and top with green onions, blue cheese extra hot sauce if desired.
