I love to make waffles at home for a weekend breakfast. They're incredibly quick and easy and I much prefer letting the waffle iron do all the work to flipping pancakes over the stovetop. Waffles don't carry any nutritional punch when they're made with oil, milk, white flour, and sugar, and then topped with butter and maple syrup. This version really makes you feel good about eating waffles; the buckwheat mix has as much fiber as whole wheat toast! Adding ground up flax seeds doesn't just add fiber and omega 3's, it actually acts as a substitute for most of the oil called for! Berries tossed with a bit of honey add colorful sweetness and a dollop of yogurt adds a creamy, tangy note. What a way to start the morning!
1 ½ cups buckwheat pancake/waffle mix
1 cup skim milk
1 egg
2 tbsp melted butter
¼ cup ground flax seeds
1 cup strawberries, sliced
1/3 cup blueberries
2 tbsp honey
½ cup lowfat vanilla yogurt
Preheat waffle iron to medium high heat. Combine buckwheat pancake mix, milk, egg, butter, and flax seeds. Lightly spray waffle iron with cooking spray and pour ¼-1/3 cup batter onto iron, depending on size. Cook until lightly browned. Meanwhile, toss berries with honey in a small bowl. Serve waffles topped with berries and a spoonful of vanilla yogurt.
