Chipotle Black Bean Salsa (September 17, 2009)

Ingredients

2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon olive oil
1 tablespoon minced canned chipotle chilies
1 1/2 teaspoons red wine vinegar
1/2 teaspoon ground cumin
1 15- ounce can black beans, rinsed and drained
3/4 cup frozen corn kernels, thawed
3/4 cup red onion,small dice
3/4 cup chopped tomatoes
1/2 cup green bell pepper, small dice
1/2 avocado, halved, pitted, peeled, diced

Directions

Whisk first 6 ingredients in large bowl to blend. Stir in black beans, corn, onion, tomatoes, bell pepper and avacado. Season with salt and pepper. Serve with tortilla chips. Makes 4 cups.
