Ingredients
fresh corn kernels from 2 ears of corn
1 large egg
1/4 cup milk
1 tablespoon butter, melted
1/4 cup a.p.flour
1/4 cup yellow corn meal
1/3 cup Monterey jack cheese
2 tablespoons chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon freshly cracked pepper
Directions
Place 1st four ingredients in a food processor. Pulse 3 or 4 times until corn is coarsely chopped. In a medium mixing bowl, stir together flour with the rest of the ingredients, then add the corn mixture, stirring until just moistened. Spoon batter onto lightly greased non-stick skillet and cook cakes 3 to 4 minutes on the first side. Turn the cakes over and cook an additional 2 minutes.
