Throwing a couple brats on the grill is the ultimate quick meal during the summertime. It requires no real planning or prep work and can be ready in minutes. I found the most delicious local sausages from Stonecross Farms at the Good Foods Market & Café. The best part is that they are sold in singles, in addition to being available in 4-packs, so you can buy as many as you like in any variety. They are so flavorful and are made from just local pork and spices.

I also picked up the most beautiful candy onions in the produce aisle that are from Whitehouse Farm in Fayette County. Caramelize these with any color bell pepper for the best bratwurst topping. I also love Chicago style hotdogs with fresh tomatoes, so a sprinkle of diced tomatoes adds that great garden touch.

1 medium red onion
1 medium white or yellow onion
2 bell peppers, any color, julienne
½ tsp kosher salt
½ tsp paprika
¼ tsp cayenne pepper
4 hot dog buns, split
4 local bratwursts
1 large tomato, diced
Spicy brown mustard, for serving

Preheat a gas or charcoal grill or a large sauté pan over high heat. Using a perforated pan for grilling vegetables, cook onions and bell peppers until well caramelized. If using a sauté pan, add 2 tsp. oil and sauté the onions and peppers for about 10 minutes, until soft and caramelized. Season with salt, paprika, and cayenne pepper.

If desired, lightly butter the hot dog buns and toast well. Grill or pan cook the bratwursts for approximately 10-12 minutes over medium to medium high heat, until cooked through.

To serve, place bratwursts on buns and top with a generous heap of grilled vegetables. Add diced tomato and serve with mustard, if desired.
