In honor of Good Foods Market & Café’s Eat Local Challenge for the month of August, I took the opportunity to scoop up some beautiful local watermelon and cantaloupe. Many people tell me they don’t like melon, but I think that’s just because they haven’t had good melon! Local, organic melons have an unmatched flavor and fragrance. Drizzled with a bit of local honey and tossed with mint and ginger really add a unique flavor to an otherwise basic fruit salad. For a fun presentation, alternate the melon cubes on small skewers, drizzle with the gingered honey and sprinkle with mint. A small pinch of salt really brings out the flavor. This would be perfect for a weekend brunch or a light afternoon refresher.
¼ cup honey
1 tbsp finely minced ginger
½ small watermelon, cut into 1 inch cubes
½ cantaloupe, cut into 1 inch cubes
2 tbsp finely chopped mint
Pinch kosher salt
In a small saucepan, gently heat honey and ginger over low heat. Simmer gently for 5 minutes, allow to steep for an additional 10 minutes, then strain. In a large bowl, toss cubed watermelon and cantaloupe with ginger infused honey, mint, and a pinch of salt. Refrigerate and serve chilled.
