Ingredients
1 pound cooked, peeled shrimp
2 scallions, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1 teaspoon salt
6 cups shredded lettuce
1 large ripe avocado
1 cup tomato salsa
fresh cilantro sprigs
lime slices
Directions
In a bowl, combine the shrimp, scallions, lemon juice, oil and salt. Mix well. Line four plates with shredded lettuce. Halve the avocado and remove the pit. with a small melon baller, scoop out balls of avocado and add to the shrimp mixture. Scrape the remaining avocado into the salad and stir. Add the salsa to the shrimp mixture and stir gently to mix. Divide the shrimp salad among the plates and garnish each salad with fresh cilantro lime.
