Minty Shamrock Brownies (March 17, 2011)

Ingredients

Brownies
1 21.5 oz package of Pillsbury Fudge Brownie Mix
1/2 cup water
1/2 cup vegetable oil
1 egg

Filling
1/2 cup softened unsalted butter
3 oz cream cheese, softened
2 1/2 cups powdered sugar
3 tablespoons crème de menthe syrup
green food coloring, if desired

Frosting
6 oz package (1 cup) semi-sweet chocolate chips
1/3 cup unsalted butter

Directions

Heat oven to 350. Grease bottom only of a 9"X13" pan. In a large bowl, combine all brownie ingredients, beat 50 strokes by hand. Spread in greased pan. Bake 33-35 minutes. Cool completely. In a medium bowl, beat 1/2 cup butter and cream cheese until light and fluffy. Add remaining ingredients and beat until smooth. Spread evenly over brownies. In a small saucepan, melt frosting ingredients in a bowl over simmering water. Stir frequently until smooth. Remove from heat cool 15 minutes. Pour frosting over filling and spread carefully to cover. Refrigerate 1 hour before cutting. Store in fridge.
