Who knows for sure if eating black-eyed peas on New Year's Day will bring good luck and prosperity in the coming year, but why chance it when this dish is so tasty and easy to throw together? Dried or frozen black eyed peas can also be used, but the canned version is your quickest bet. This would be the perfect appetizer or snack on New Year's Day, served with tortilla chips, pita chips, or even crackers. Leftovers are great as a salad or side dish the following day.
2 16-oz cans black-eyed peas, drained and rinsed
1 bell pepper, finely diced
1 large tomato, diced or 1 cup cherry tomatoes, quartered
2 tbsp sweet pickled jalapenos, chopped
2 cloves garlic, minced
1/3 cup sliced green onions
2 tbsp chopped parsley
1/3 cup balsamic vinagrette
1 tablespoon Worchestershire sauce
Hot sauce, to taste
Salt and pepper, to taste
In a large bowl, combine the black-eyed peas, bell pepper, tomato, jalapenos, garlic, green onions, and parsley. Toss with the vinaigrette and Worcestershire sauce, then season to your liking with salt, pepper, and hot sauce. Refrigerate until ready to eat.
