Ingredients
1/2 pound fresh snow peas, strings removed
3/4 pound cooked shrimp, shelled and deveined
1 cup canned water chestnuts, drained and sliced
2 tablespoons light soy sauce
1 tablespoon rice wine vinegar
2 tablespoons honey
juice of 1 lemon
1/2 cup light vegetable oil
thinly shredded iceberg lettuce
Directions
Bring a large pot of water to the boil. Blanch the snow peas in the water for 30 seconds,drain, then plunge into an ice bath. Drain again. Arrange the shrimp,snow peas, and water chestnuts on individual salad plates that have been lined with shredded iceberg lettuce. Combine dressing ingredients and pour over the salad. Serves 4-6
