Pumpkin Cookies (October 20, 2011)

Ingredients

2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
4 ounces unsalted butter, room temp.
1/2 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1/2 cup whole milk
3/4 cup canned pumpkin

Directions

Preheat oven to 350. Line a baking sheet with parchment paper. In a bowl, combine the first 5 ingredients. In a large mixing bowl, beat the butter, brown sugar,and granulated sugar with a mixer until light and fluffy. Beat in eggs and vanilla until blended. Slowly beat in milk and pumpkin and add dry ingredients. Beat until just blended. Drop by tablespoons onto the baking sheet. Bake for 12 to 14 minutes until tops are firm. Cool on baking sheet then loosen to cool onto a cookie rack.
