Ingredients
1 9 -inch pie crust, par baked
5 strips bacon, cooked crisp and crumbled
3 slices Swiss cheese, julienned
1 medium onion, sliced
2 whole eggs plus 2 egg yolks
1 1/2 cups half and half
pinch of nutmeg
salt and white pepper to taste
Directions
Arrange bacon and Swiss cheese on bottom of pie crust. Sauté onion in 1 tablespoon butter over medium heat. Sprinkle cooked onions over bacon and cheese. Put eggs in a blender or processor and pulse till frothy. Season with salt, pepper and nutmeg. Add the cream and blend well. Preheat oven to 375 and place the pie shell in center of rack. Pour in egg mixture over the other ingredients gently so as not to spill over pan. Bake until the custard sets and top is golden brown.
