Red Beans And Rice (November 10, 2009)

Red beans and rice is one of my favorite comfort foods because it's so simple and filling, but also relatively healthy and a great source of protein. My friend makes the best red beans and rice, but hers are a true labor of love that simmer on the stovetop for an entire day. For those of us that don't plan ahead, this shortcut version can be thrown together in no time and still has that comforting, slow cooked flavor. Omit the sausage for a vegetarian version and serve over brown rice for an extra boost of fiber.

2 tsp olive oil
3 stalks celery, diced
1 yellow onion, diced
1 green bell pepper, diced
½ lb smoked sausage, diced
3 cloves garlic, minced
2 cans red beans
2 bay leaves
1 tsp thyme
2 tsp Cajun seasoning
salt and pepper, to taste
Cooked white rice, for serving

In a large pot, heat olive oil over high heat and sauté diced celery, onion, and green pepper until soft, about 5-7 minutes. Add sausage and garlic and sauté for 2 minutes. Add beans, bay leaves, thyme, and seasoning. Simmer for 20-25 minutes, until mixture is thick and creamy. Season with salt and pepper and serve over white rice.
