Roasted Chicken Salad With Tarragon and Apples (June 8, 2010)

Store bought rotisserie chicken is one of my favorite shortcuts for last minute meals. They are consistently delicious and the flavorful, moist chicken meat makes the most incredible chicken salad! This version is perfect for the summer with the light and fresh crunch of apples, tart sweetness of cranberries, and the addition of flavorful tarragon.

2 cups diced rotisserie chicken
1 granny smith apple, diced
½ cup dried cranberries
1/3 cup sliced scallions
2 Tbsp chopped tarragon
1/2 cup mayonnaise
Salt and pepper, to taste
Bibb lettuce leaves, for serving
Crackers, for serving

In a large bowl, combine diced chicken, apple, cranberries, scallions, and tarragon. Stir in mayonnaise and season with salt and pepper.

Place scoops of chicken salad on Bibb lettuce leaves and serve with crackers on the side.
