Brunch is my favorite meal to serve and I love casserole style dishes that are easy to assemble ahead of time. This can even be put together the night before and popped into the oven in the morning. A strata is similar to a quiche, but without the fuss and unnecessary calories of a buttery crust that has to be made, rolled, and pre-baked. Feel free to substitute any leftovers meats, vegetables, or cheeses you have in your refrigerator to create your own variation of this versatile, quick, and inexpensive dish that is reminiscent of a savory bread pudding.
2 links Italian sausage, casings removed
½ onion, thinly sliced
½ cup diced green bell pepper
½ cup diced roasted red pepper
2 cups lowfat milk
5 eggs
1 tsp kosher salt
½ tsp freshly ground black pepper
6 slices white sandwich bread, cubed
1 cup grated white cheddar cheese
Preheat oven to 375 degrees. Heat a medium skillet over high heat and brown sausage until fully cooked, crumbling with a wooden spoon. Add onion and green bell pepper, cooking vegetables until soft and lightly browned. Remove from heat and add roasted red pepper.
In a separate bowl, whisk together milk, eggs, salt, and pepper. Add bread cubes and allow to soak briefly in the egg mixture. Add sausage and vegetable mixture and gently mix to combine. Transfer to a baking dish and sprinkle with white cheddar. Bake for 35-40 minutes, or until golden and set in the center.
