Ingredients
1 spaghetti squash, halved and seeded
1/4 cup butter
1 small onion chopped
1 pint cherry tomatoes
2 cloves fresh garlic, minced
salt and pepper to taste
2 to 3 tablespoons freshly grated Parmesan cheese
Directions
Preheat oven to 350. Coat a baking sheet with cooking spray and place squash halves cut side down on sheet. Bake until tender, about 40 minutes. Shred flesh from rind using a fork. Melt butter in medium skillet. Cook onion till soft, add cherry tomatoes and minced garlic. Sauté one minute. Add squash to skillet, stir and season with salt and pepper. Sauté until hot. Top with Parmesan cheese Serves 4.
