Ingredients
2 tablespoons olive oil
2 cups fresh bread crumbs
4 large red ripe tomatoes in thick slices
2 tablespoons fresh chives, minced
2 tablespoons fresh parsley, minced
Salt and Pepper
3 tablespoons Parmesan cheese
Directions
Preheat oven to 375. Oil a shallow medium baking dish. Warm the oil in a skillet over medium heat, add the bread crumbs and toast them until golden brown,stirring occasionally, about 4 minutes. Sprinkle about half of the crumbs over the bottom of the prepared dish. Arrange a single layer of tomato slices over the crumbs. Then sprinkle with one third of the chives and parsley and season with S & P. Add another layer of bread crumbs and repeat with remaining tomatoes,herbs and seasonings. End with a sprinkling of the bread crumbs. Top with Parmesan cheese and bake for 15-20 minutes until heated through.
