It's that wonderful time of year when there is an abundance of summer fruit at an extremely affordable cost. I always look forward to peach season and I love finding ways to use peaches in savory applications. I make this salsa at the beginning of the week and snack on it with blue corn tortilla chips. It's such a tasty blend of sweet and spicy and the flavor from the herbs is so fresh and fragrant. For an entrée, use it to top fish, chicken, salads, or tacos.
4 Small Peaches
1/4 Cup Red Onion
2 Tbsp. Chopped Cilantro
2 Tbsp. Chopped
1 Small Jalapeno
Juice of 1 Lime
1/2 Cup Diced Cucumber
1 Clove Garlic, Minced
Salt & Pepper, To Taste
In a medium bowl, lightly toss peaches with cucumber, red onion, cilantro, mint, and diced jalapeno. Add the lime juice and garlic clove, seasoning with salt and pepper to taste. Allow to sit for 15 minutes before serving or cover and refrigerate until ready to use.
