Sweet 16 Sweet Potato Chips And Wildcat Blue Cheese Dip (March 23, 2010)

Watching all these basketball games has left me with a serious craving for chips and dip. And you know how I love to make special recipes for specific sporting events! These baked sweet potato chips are highly addicting and so easy to make. You can use traditional sweet potatoes or local white sweet potatoes, which are available at Good Foods. If you run out of time, Good Foods also has several varieties of baked vegetable chips and sweet potato chips available in their snack aisle.

2 medium sweet potatoes, scrubbed and sliced 1/8 inch thick
1 tablespoon extra-virgin olive oil
1/2 teaspoon coarse salt, preferably sea salt

Preheat oven to 400 degrees.

Divide sweet potato slices between 2 baking sheets. Drizzle with oil, lightly toss, and spread them in a single layer on sheets. Bake, flipping once, until centers are soft and edges are crisp, 18-22 minutes. Sprinkle with salt and serve with Blue Cheese Dip.

Wildcat Blue Cheese Dip

This dip is delicious with chips, cut vegetables, or even thinned out with extra buttermilk and used as a salad dressing.

½ cup lowfat sour cream
¼ cup lowfat buttermilk
¾ cup crumbled blue cheese (about 3 ounces)
Dash Worchestershire sauce
2 tablespoons sliced scallions
Dash garlic powder
Salt and pepper, to taste

For a chunky dip, combine all ingredients in a medium size mixing bowl, seasoning to taste with salt and pepper. If you prefer a smoother dip, process the sour cream, buttermilk, blue cheese, and Worcestershire sauce in a food processor. Mix in the scallions and season to taste with garlic powder, salt, and pepper.
