Ingredients
Bibb lettuce, to line platter
2 tomatoes, quartered
1 cup cooked green beans, chilled
1/2 pound red skinned potatoes, cooked and sliced
1 small red onion, thinly sliced
2 hard boiled eggs, quartered
kalamata olives, pitted
1 can Italian packed tuna in olive oil
Lemon vinaigrette
Dressing:
1 Tablespoons lemon juice
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 1/2 teaspoons lemon zest
1 1/4 teaspoon fresh tarragon, chopped
1/4 teaspoon salt
1/8 teaspoon pepper
1 small clove garlic, minced
1/3 cup light olive oil
Directions
Combine all dressing ingredients in a glass jar. Shake and serve.
Line platter with lettuce. Add enough dressing to coat green beans and place on lettuce. Repeat with potatoes. Arrange remaining vegetables on platter and top with tuna. Garnish with eggs and olives.Drizzle entire salad with dressing.
