Vegetable Soup (January 6, 2011)

Ingredients

1 large onion, sliced
2 stalks celery, sliced
1 carrot,peeled medium dice
5 new potatoes, unpeeled,sliced
1 stalk broccoli, stem sliced and florets cut into small pieces
2 tablespoons olive oil
3 cloves garlic, minced
5 1/2 cups chicken broth
1/2 cup fresh corn off the cob, or frozen
2 tablespoons chopped fresh dill weed
freshly ground pepper

Directions

Heat olive oil in a 4 quart pot over medium heat. Add onion,celery and garlic and sauté 3 minutes or until onion is soft. Add carrot, potatoes, broccoli stem and chicken broth. Bring to a boil and reduce heat to low and simmer 15 minutes or until tender. Add corn, broccoli florets, dill and pepper. Simmer 5 minutes. Serves 6.
