Photojournalist Morgan Crouch's BBQ Chicken Sandwich with Coleslaw
Ingredients:
3-4 chicken breasts
1 1/2 cups pineapple juice
1 1/2 cups bbq sauce
1 cup brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon minced garlic
1 teaspoon salt
Coleslaw
Directions:
•Put the chicken in the crockpot in low for 6 hours or high for 3 hours
•At least 30 minutes before serving mix the pineapple juice, bbq sauce, brown sugar, Worcestershire sauce, minced garlic and salt
•Shred the chicken
•Stir the sauce into the crockpot with the chicken and let sit for about 30 minutes
Coleslaw:
14 oz Coleslaw mix
1/2 cup mayo
2 tablespoons sugar
1 1/2 tablespoons lemon juice
Salt & pepper to taste
•Mix together in a medium size bowl and let chill in the refrigerator for 10 minutes before serving
*You can make bbq chicken sandwiches, tacos or nachos and top with the coleslaw*
